Is Calling Someone "It" Out of the Question?

A person in Oregon is suing their place of work for not using “gender neutral” pronouns when addressing said person.
Do you know how hard it is to even write a story without using a pronoun that identifies gender? Holy cow.
Valeria Jones is suing catering company Bon Appétit Management for $518,682 because coworkers used female names in reference to Jones despite the fact that Jones had continually expressed the desire to be addressed only with gender neutral pronouns.
The reasoning behind Jones’s lawsuit is because Jones claims to be neither a male or female–so I’m guessing calling this person “he/she” is not the appropriate pronoun, either…
