Recipe: My Favorite Healthy Discovery—the Protein Pancake

Since beginning my work in this field of health and fitness, I have found that I have trouble relating to most people when it comes to food. During my coaching sessions I find that most people really LOVE their food. As a recovering bulimic, I still struggle with the very opposite; I actually think I hate food. So relating to them takes a special amount of grace I think, in order to connect and effectively work through the task at hand.

I don’t enjoy cooking much, I rather not fuss with exhaustive recipes and I am quite content with eating the same things everyday, I know, how boring! But wait; please let me tell you what I’m excited to share with you! Okay, so this may not be so exciting for you and likely you have already heard of these little gems, but this is all new to me, thus the excitement.

Will this presidential election be the most important in American history?

A little back story here; I used to struggle greatly with getting enough protein in my daily meals. I could eat vegetables all day long but there was never enough protein in my diet. Not having enough protein in your diet results in less muscle and slower metabolism. After a weekend with a dear friend I learned little tips and tricks in how to easily add protein into some of my favorite dishes.

With the struggles at hand I took what I had and turned it all around. I am not only proud of myself but happy to have conquered a true obstacle that caused me to stumble in my progress for so long.

Here’s the recipe:

1 serving of steel cut oats, or one fist full

1 egg or 1 serving of egg whites

1 scoop of protein

Other suggestions include

A few shakes of cinnamon

2-3 tbsp of cranberry

1 tbsp of shredded coconut

Organic berries

Agave nectar

In a small microwave safe dish add oats and water just enough to cover the oats (about 1 cup at most). You don’t want to over cook them and you don’t want to have an excess amount of water. Cook for 1 minute. Add scoop of protein and egg. Mix well and cook on skillet. You may need to spray a little non-stick, depending on your skillet. Feel free to add a little fruit or agave nectar for added sweetness. I find that I don’t need the nectar when I use the fruit.

So there it is dear friends. I have resolved in life to take the necessary steps in life to reach my goals and I’m doing it in baby steps. What are you doing?
